Ingredients
Salad
4 cups mixed greens (arugula, baby kale, or spring mix)
1 large crisp apple (Honeycrisp or Granny Smith), thinly sliced
3–4 oz smoked Gouda, shaved or cubed
¼ cup toasted walnuts or pecans
2 tbsp dried cranberries or thinly sliced dates
Optional: thinly sliced red onion or fennel
Honey Dijon Vinaigrette
3 tbsp olive oil
1½ tbsp apple cider vinegar
1 tsp Dijon mustard
1½ tsp honey (to taste)
Salt & freshly cracked black pepper
Instructions
Make the Dressing
Whisk vinegar, Dijon, honey, salt, and pepper. Slowly whisk in olive oil until emulsified.Assemble the Salad
Place greens in a large bowl.
Add apple slices, smoked Gouda, nuts, dried fruit, and onion/fennel if using.
Dress & Serve
Toss lightly with dressing just before serving.
Finish with cracked pepper.
