  • ½ cup granulated sugar

  • 1 tbsp cinnamon


Instructions

1. Reduce the Apple Cider

  1. In a small saucepan, simmer 1 cup apple cider over medium heat until it reduces to ½ cup (about 10 minutes).

  2. Let it cool slightly — this gives that concentrated apple flavor. 🍎


2. Make the Batter

  1. Preheat oven to 350°F (175°C) and line or grease a 12-cup muffin tin.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.

  3. In a large bowl, whisk melted butter, brown sugar, and granulated sugar until combined.

  4. Add eggs, one at a time, then whisk in reduced cider, buttermilk, and vanilla.

  5. Stir in dry ingredients until just combined (don’t overmix).


3. Bake

  1. Divide batter evenly among muffin cups (about ⅔ full).

  2. Bake 15–18 minutes, or until a toothpick inserted in the center comes out clean.

4. Coat in Cinnamon Sugar

  1. In a small bowl, mix sugar and cinnamon.
