The noodles are paired with a savory-sweet sesame dressing, making this dish both flavorful and satisfying. The vegetables, which include bell pepper, cucumber, carrots, and cabbage, contribute a fresh crunch, while the addition of edamame and cilantro gives it a unique twist.

For the salad:

  • 8 oz soba noodles (buckwheat noodles)

  • 1 red bell pepper, thinly sliced

  • 1 cucumber, julienned or spiralized

  • 2 medium carrots, julienned

  • 3 green onions, thinly sliced

  • 1 cup shredded purple cabbage (optional for crunch & color)

  • ½ cup edamame (shelled, cooked)

  • ¼ cup fresh cilantro or mint, chopped

  • 2 tbsp toasted sesame seeds (black or white)

For the sesame dressing:

  • 3 tbsp soy sauce (or tamari for gluten-free)

  • 2 tbsp rice vinegar

  • 1 tbsp sesame oil (toasted)

  • 1 tbsp neutral oil (avocado, grapeseed, or canola)

  • 1 tbsp honey or maple syrup

  • 1 tsp grated fresh ginger

  • 1 clove garlic, minced

  • 1 tsp sriracha or chili paste (optional, for heat)


Instructions

  • Cook noodles

    • Bring a pot of water to boil. Cook soba noodles according to package instructions (usually 4–5 minutes).

    • Drain and rinse under cold water to stop cooking. Set aside.

  • Make the dressing

    • Whisk together soy sauce, rice vinegar, sesame oil, neutral oil, honey, ginger, garlic, and chili paste until smooth.

  • Assemble salad

    • In a large bowl, toss soba noodles with bell pepper, cucumber, carrots, cabbage, edamame, and green onions.

    • Pour dressing over and toss until evenly coated.

  • Finish & serve

    • Garnish with sesame seeds and fresh herbs.

    • Serve chilled or at room temperature.

Notes

For extra crunch, top with toasted sesame seeds, chopped peanuts, or sliced scallions. Serve chilled or at room temperature, and add grilled tofu, shrimp, or chicken for a protein boost.
