For the Cake:
- 1 cup all-purpose flour
- 1½ tsp baking powder
- ¼ tsp salt
- 5 large eggs (separated)
- 1 cup granulated sugar (¾ cup for yolks, ¼ cup for whites)
- ⅓ cup whole milk
- 1 tsp vanilla extract
For the Milk Mixture:
- 12 oz evaporated milk
- 14 oz sweetened condensed milk
- ¼ cup whole milk
For the Whipped Topping:
- 1 pint heavy whipping cream
- 3 tbsp powdered sugar
- ½ tsp vanilla extract
- Ground cinnamon (optional)
- Fresh strawberries or berries (optional)
Instructions
1. Prepare the Cake:
- Preheat oven to 350°F (175°C).
- In a bowl, sift flour, baking powder, and salt.
- Separate egg yolks and whites into two bowls.
- Beat yolks with ¾ cup sugar until pale yellow. Stir in milk and vanilla.
- Pour yolk mixture into flour mixture and gently combine.
- Beat egg whites until soft peaks form. Add remaining ¼ cup sugar and beat until stiff peaks form.
- Fold egg whites into the batter gently.
- Pour into an ungreased 9×13-inch pan and bake for 25–35 minutes.
- Cool completely.
2. Soak the Cake:
- Mix evaporated milk, condensed milk, and whole milk.
- Poke holes all over the cooled cake with a fork.
- Slowly pour the milk mixture over the cake.
- Refrigerate for at least 1 hour or overnight.
3. Make the Whipped Topping:
- Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Spread over the cake.
- Sprinkle cinnamon and garnish with berries if desired.
