  • 2½ cups rolled oats
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground allspice
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cardamom
  • 1 tsp baking powder
  • ¾ tsp kosher salt
  • 1 cup chopped toasted pecans (divided)

Wet Mix:

  • 5 tbsp unsalted butter (divided)
  • ½ cup brown sugar (divided)
  • 2 cups whole milk (or almond/oat milk)
  • 1 large egg, lightly beaten
  • 1 tbsp vanilla extract
  • 2 large Honeycrisp apples, peeled and diced (divided)
  • 2 tbsp maple syrup

Instructions

  • Preheat oven to 375°F (190°C). Grease an 11×7-inch baking dish.
  • In a skillet, toast oats over medium heat until nutty (about 4 mins). Add spices and toast 1–2 mins more. Transfer to mixing bowl.
  • Stir in ¾ cup pecans, baking powder, and salt.
  • Melt 3 tbsp butter in a large bowl. Whisk in 3 tbsp brown sugar, milk, egg, and vanilla.
  • Fold oat mixture into wet mix. Stir in half the diced apples.
  • Pour into prepared pan and bake for 35–40 mins, until golden and set.
  • Meanwhile, sauté remaining apples in 2 tbsp butter with 2 tbsp brown sugar and maple syrup until soft and syrupy (8–10 mins).
  • Spoon apple topping over baked oats. Sprinkle remaining pecans.
