Ingredients

1 ¾ cups (220 g) all-purpose flour
1 tsp baking soda
½ tsp salt

3 medium ripe bananas (about 1 ¼ cups mashed)
½ cup (115 g) unsalted butter, melted (or coconut oil)
¾ cup (150 g) brown sugar
2 large eggs, room temperature
2 tsp instant espresso powder (or finely ground coffee)
1 tsp vanilla extract
Add-ins:
¾ cup (75 g) chopped walnuts (plus extra for topping)
Optional: ¼ cup (45 g) mini chocolate chips for a mocha twist
Instructions
Preheat oven to 350°F (175°C).
Grease and line a 9×5-inch loaf pan with parchment paper.Mix dry ingredients:
In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.Combine wet ingredients:
In a large bowl, mash bananas. Whisk in melted butter, brown sugar, eggs, espresso powder, and vanilla until smooth.Combine wet + dry:
Add dry ingredients to wet and gently mix until just combined (don’t overmix).Fold in walnuts (and chocolate chips, if using).
Pour into loaf pan and smooth the top. Sprinkle with extra chopped walnuts.
Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
(If the top browns too fast, tent with foil halfway through.)Cool completely in the pan for 15 minutes, then transfer to a wire rack.
