Description

BBQ Jackfruit Tacos with Pineapple Slaw are a vegan taco dish made using young green jackfruit as a meat substitute.   • 2 cans young green jackfruit in brine, drained & shredded

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • ½ tsp cumin

  • ½ tsp garlic powder

  • ¾ cup BBQ sauce

Pineapple Slaw

  • 1½ cups shredded cabbage or coleslaw mix

  • ½ cup fresh pineapple, finely chopped

  • 2 tbsp lime juice

  • 1 tbsp maple syrup or honey

  • Salt to taste

For Serving

  • Warm corn or flour tortillas

  • Fresh cilantro

  • Sliced avocado (optional)


Instructions

  • Jackfruit: Heat oil in skillet. Add jackfruit, spices, and sauté until lightly crisped.

  • Stir in BBQ sauce; simmer 5–7 minutes until sticky and caramelized.

  • Slaw: Toss all slaw ingredients in a bowl; chill briefly.

  • Assemble tacos with BBQ jackfruit and pineapple slaw. Garnish and serve.

Notes

For extra zest and crunch, top the tacos with fresh cilantro, a squeeze of lime, or sliced jalapeños. These jackfruit tacos are delicious served with warm corn tortillas, and a side of black beans or Mexican rice makes them a complete, satisfying plant-based meal.
