BBQ Jackfruit Tacos with Pineapple Slaw are a vegan taco dish made using young green jackfruit as a meat substitute. Ingredients
BBQ Jackfruit
2 cans young green jackfruit in brine, drained & shredded
1 tbsp olive oil
1 tsp smoked paprika
½ tsp cumin
½ tsp garlic powder
¾ cup BBQ sauce
Pineapple Slaw
1½ cups shredded cabbage or coleslaw mix
½ cup fresh pineapple, finely chopped
2 tbsp lime juice
1 tbsp maple syrup or honey
Salt to taste
For Serving
Warm corn or flour tortillas
Fresh cilantro
Sliced avocado (optional)
Instructions
Jackfruit: Heat oil in skillet. Add jackfruit, spices, and sauté until lightly crisped.
Stir in BBQ sauce; simmer 5–7 minutes until sticky and caramelized.
Slaw: Toss all slaw ingredients in a bowl; chill briefly.
Assemble tacos with BBQ jackfruit and pineapple slaw. Garnish and serve.
Notes
For extra zest and crunch, top the tacos with fresh cilantro, a squeeze of lime, or sliced jalapeños. These jackfruit tacos are delicious served with warm corn tortillas, and a side of black beans or Mexican rice makes them a complete, satisfying plant-based meal.
