  • 3 large potatoes, peeled and diced
  • 2 large carrots, sliced
  • 1 tsp sugar (balances acidity)
  • 2 tbsp flour (for thickening)
  • Fresh parsley for garnish

Instructions

  • Sear the beef: Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown on all sides. Remove and set aside.
  • Sauté the aromatics: In the same pot, add onions and cook until softened. Stir in garlic and cook for 1 minute.
  • Deglaze the pot: Pour in red wine (if using) and scrape up any browned bits from the bottom.
  • Build the stew base: Add beef broth, tomato paste, Worcestershire sauce, paprika, thyme, salt, pepper, and sugar. Stir to combine.
  • Simmer the beef: Return beef cubes to the pot. Cover and simmer for 1.5 to 2 hours, until tender.
  • Add vegetables: Stir in potatoes and carrots. Cook for 30 minutes, until vegetables are soft.
  • Thicken the stew: Mix flour with a little water to form a slurry. Stir into the stew and cook for 5 minutes until thickened.
  • Garnish & serve: Sprinkle with fresh parsley and serve hot!

Notes
