Description
Beef stew with carrots and potatoes is a robust, savory dish made by simmering beef and vegetables in a rich, flavorful broth. The beef becomes tender and juicy, and the potatoes and carrots soak up all the delicious flavors from the stew base. The result is a hearty, satisfying meal perfect for any occasion, especially on chilly days. It’s an ideal dish for those who love tender meat, flavorful vegetables, and comforting meals.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 large onion, diced
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 cup dry red wine (optional, for depth of flavor)
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp paprika
- 1 tsp dried thyme
- ½ tsp salt
- ½ tsp black pepper
- 3 large potatoes, peeled and diced
- 2 large carrots, sliced
- 1 tsp sugar (balances acidity)
- 2 tbsp flour (for thickening)
- Fresh parsley for garnish
Instructions
- Sear the beef: Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown on all sides. Remove and set aside.
- Sauté the aromatics: In the same pot, add onions and cook until softened. Stir in garlic and cook for 1 minute.
- Deglaze the pot: Pour in red wine (if using) and scrape up any browned bits from the bottom.
- Build the stew base: Add beef broth, tomato paste, Worcestershire sauce, paprika, thyme, salt, pepper, and sugar. Stir to combine.
- Simmer the beef: Return beef cubes to the pot. Cover and simmer for 1.5 to 2 hours, until tender.
- Add vegetables: Stir in potatoes and carrots. Cook for 30 minutes, until vegetables are soft.
- Thicken the stew: Mix flour with a little water to form a slurry. Stir into the stew and cook for 5 minutes until thickened.
- Garnish & serve: Sprinkle with fresh parsley and serve hot!
Notes
This hearty stew tastes even better the next day as the flavors deepen overnight. Serve it with crusty bread or over a bed of rice for a filling meal. Want a richer flavor? Add a splash of red wine while simmering, or toss in a bay leaf for that classic, slow-cooked aroma.
