Ingredients
2 medium beets, roasted and sliced into rounds
2 oranges (navel or blood orange), peeled and sliced into rounds
4 oz goat cheese, softened
2 tbsp olive oil
1 tbsp balsamic vinegar or honey
Salt & freshly ground black pepper
Fresh thyme, mint, or arugula (for garnish)
Optional toppings:
Chopped pistachios or walnuts
Balsamic glaze
Orange zest
Instructions
Roast the Beets
Preheat oven to 400°F (200°C).
Wrap beets in foil with a drizzle of olive oil and a pinch of salt.
Roast 45–60 minutes until tender. Cool, peel, and slice into rounds.
Prepare the Oranges
Slice oranges crosswise into thin rounds.
Pat dry with paper towels to avoid excess juice.
Season the Goat Cheese
Mix goat cheese with a pinch of salt, pepper, and a little orange zest if desired.
Assemble the Stacks
Layer in this order:
Beet → Goat Cheese → Orange → Goat Cheese → BeetRepeat until you have 4 stacks.
Finish & Garnish
Drizzle olive oil and balsamic (or honey) over the stacks.
Sprinkle with nuts, herbs, and cracked pepper.
