Description
At its core, Baked Feta Tomato Chicken is a tray-bake meal that relies on the magic of high-heat roasting to create a self-making sauce. Unlike traditional chicken recipes that might require you to stand over a stove reducing liquids or whisking creams, this dish does all the heavy lifting in the oven.
Ingredients

3–4 boneless chicken breasts (or thighs)

200 g feta cheese block

2 cups cherry tomatoes (or chopped regular tomatoes)

3–4 cloves garlic, minced

3 tbsp olive oil

1 tsp dried oregano (or Italian seasoning)

½ tsp chili flakes (optional)

Salt and black pepper to taste

Fresh basil or coriander (optional, for garnish)
Instructions

Preheat oven
Set your oven to 200°C (400°F). -
Prepare the base

In a baking dish, add tomatoes and garlic.

Drizzle with olive oil, oregano, chili flakes, salt, and pepper.

Toss to coat evenly.

Add feta & chicken
-
Place the feta block in the center of the dish.

Arrange chicken around it.

Drizzle a little more olive oil over the chicken and season lightly.

Bake
Bake for 30–35 minutes or until chicken is fully cooked (internal temp ~75°C / 165°F). -
Mix the sauce

Remove from oven.

Gently mash the softened feta and tomatoes together to create a creamy sauce.

Spoon sauce over the chicken.

Garnish & serve
Top with fresh herbs and serve hot.
Notes
For extra juiciness, let the chicken rest for 5 minutes after baking before serving. You can also swap chicken breasts for thighs for a richer flavor.
