For the Filling:

  • 2 medium sweet potatoes, peeled and diced into small cubes

  • 1/2 teaspoon garlic powder

  • Salt and pepper, to taste

  • 1 can (14 oz) black beans, drained and rinsed

  • 1/4 cup water or vegetable broth

  • Juice of 1/2 lime

For the Tacos:

  • 8 small corn or flour tortillas

  • 1 ripe avocado, sliced or mashed

  • 1/4 cup red onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • 1/4 cup crumbled feta or cotija cheese (optional)

  • Lime wedges (for serving)

Optional Toppings:

  • Salsa or hot sauce

  • Greek yogurt or sour cream

  • Shredded lettuce or cabbage


Instructions

1. Roast the Sweet Potatoes:

  1. Preheat your oven to 425°F (220°C).
  2. Place the diced sweet potatoes on a baking sheet. Drizzle with olive oil and sprinkle with smoked paprika, cumin, chili powder (if using), garlic powder, salt, and pepper. Toss to coat evenly.
  3. Roast in the oven for 20–25 minutes, flipping halfway through, until the sweet potatoes are tender and slightly crispy on the edges.

2. Prepare the Black Beans:

  1. While the sweet potatoes are roasting, heat a small saucepan over medium heat.
  2. Add the black beans, water or vegetable broth, lime juice, and a pinch of salt and pepper. Stir and simmer for 5–7 minutes, until heated through. Mash slightly with the back of a spoon for a creamy texture, leaving some beans whole.

3. Warm the Tortillas:

  1. Heat the tortillas in a dry skillet over medium heat for 30 seconds on each side, or wrap them in foil and warm in the oven for 5 minutes.

4. Assemble the Tacos:

  1. Fill each tortilla with a scoop of roasted sweet potatoes and black beans.
  2. Top with sliced or mashed avocado, red onion, cilantro, and crumbled feta or cotija cheese (if using).
  3. Add any optional toppings like salsa, hot sauce, or Greek yogurt.

5. Serve:

  • Serve immediately with lime wedges on the side for squeezing over the tacos.

Notes

For extra flavor, add a squeeze of fresh lime juice and a sprinkle of chopped cilantro before serving. These tacos also pair well with a side of salsa or a dollop of Greek yogurt or vegan sour cream.
