Instructions
1. Roast the Sweet Potatoes:
- Preheat your oven to 425°F (220°C).
- Place the diced sweet potatoes on a baking sheet. Drizzle with olive oil and sprinkle with smoked paprika, cumin, chili powder (if using), garlic powder, salt, and pepper. Toss to coat evenly.
- Roast in the oven for 20–25 minutes, flipping halfway through, until the sweet potatoes are tender and slightly crispy on the edges.
2. Prepare the Black Beans:
- While the sweet potatoes are roasting, heat a small saucepan over medium heat.
- Add the black beans, water or vegetable broth, lime juice, and a pinch of salt and pepper. Stir and simmer for 5–7 minutes, until heated through. Mash slightly with the back of a spoon for a creamy texture, leaving some beans whole.
3. Warm the Tortillas:
- Heat the tortillas in a dry skillet over medium heat for 30 seconds on each side, or wrap them in foil and warm in the oven for 5 minutes.
4. Assemble the Tacos:
- Fill each tortilla with a scoop of roasted sweet potatoes and black beans.
- Top with sliced or mashed avocado, red onion, cilantro, and crumbled feta or cotija cheese (if using).
- Add any optional toppings like salsa, hot sauce, or Greek yogurt.
5. Serve:
- Serve immediately with lime wedges on the side for squeezing over the tacos.
