Description

The Blackberry Thyme Crumble with Oat Topping is a delightful dessert where fresh blackberries are combined with a subtle herb twist—thyme—creating a complex flavor profile. The fruit filling is topped with an oat crumble that’s buttery, slightly sweet, and slightly crunchy. Baked until golden brown, the fruit below becomes juicy and bubbling, creating the perfect contrast to the crunchy topping.

Ingredients

Scale

Fruit Filling

  • 4 cups fresh blackberries (or frozen, thawed & drained)

  • â…“ cup granulated sugar (adjust to berry sweetness)

  • 1 tbsp cornstarch (or flour, to thicken juices)

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 2–3 sprigs fresh thyme (leaves only, stripped from stems)

Oat Crumble Topping

  • 1 cup rolled oats

  • ½ cup all-purpose flour

  • ½ cup brown sugar (lightly packed)

  • ½ tsp ground cinnamon

  • ¼ tsp salt

  • ½ cup (1 stick) cold unsalted butter, cut into cubes

  • ¼ cup chopped nuts (optional: almonds, pecans, or walnuts)

Instructions

1. Prepare the Fruit

  1. Preheat oven to 350°F (175°C).

  2. In a mixing bowl, toss blackberries with sugar, cornstarch, lemon juice, zest, and thyme leaves.

  3. Spread evenly in a greased baking dish (8×8-inch works well).

2. Make the Crumble Topping

  1. In another bowl, combine oats, flour, brown sugar, cinnamon, and salt.

  2. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.

  3. Stir in nuts if using.

3. Assemble & Bake

  1. Sprinkle crumble mixture evenly over blackberries.

  2. Bake 35–40 minutes, until topping is golden brown and fruit is bubbling.

  3. Cool slightly before serving.

Serving Suggestions

  • Serve warm with vanilla ice cream, whipped cream, or a drizzle of honey or cream.

  • Garnish with a sprig of fresh thyme for a beautiful finish.

Notes

A cozy twist on a classic crumble — the earthy aroma of thyme enhances the sweet-tart blackberries, while the oat topping adds a satisfying crunch. Best enjoyed warm with a scoop of vanilla ice cream or a dollop of whipped cream
