  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract

Instructions

1. Preheat the Oven

Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.

2. Prepare the Blueberry Filling

  • In a medium saucepan over medium heat, combine the blueberriessugarlemon juicecornstarchvanilla extract, and salt.
  • Cook until the mixture starts to bubble and thicken, about 5-7 minutes. Remove from heat and set aside to cool slightly.

3. Make the Crust and Topping

  • In a large mixing bowl, combine the flourrolled oatsbrown sugarbaking powder, and salt.
  • Pour in the melted butter and vanilla extract, mixing until the mixture resembles coarse crumbs.

4. Assemble the Bars

  • Press about two-thirds of the crumble mixture into the bottom of the prepared baking pan to form the crust.
  • Spread the blueberry filling evenly over the crust.
  • Sprinkle the remaining crumble mixture on top of the blueberry filling.

5. Bake

  • Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the filling is bubbling.

6. Cool and Serve

  • Allow the bars to cool in the pan for at least 10 minutes before cutting into squares.
  • For best results, let them cool completely before serving to allow the filling to set.

Notes
