Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
2. Prepare the Blueberry Filling
- In a medium saucepan over medium heat, combine the blueberries, sugar, lemon juice, cornstarch, vanilla extract, and salt.
- Cook until the mixture starts to bubble and thicken, about 5-7 minutes. Remove from heat and set aside to cool slightly.
3. Make the Crust and Topping
- In a large mixing bowl, combine the flour, rolled oats, brown sugar, baking powder, and salt.
- Pour in the melted butter and vanilla extract, mixing until the mixture resembles coarse crumbs.
4. Assemble the Bars
- Press about two-thirds of the crumble mixture into the bottom of the prepared baking pan to form the crust.
- Spread the blueberry filling evenly over the crust.
- Sprinkle the remaining crumble mixture on top of the blueberry filling.
