Ingredients
For the muffins:
1 ¾ cups (220g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp ground cinnamon
¼ tsp nutmeg (optional)
½ cup (100g) brown sugar
¼ cup (50g) granulated sugar
½ cup (115g) unsalted butter, melted and slightly cooled
2 large eggs
½ cup (120ml) buttermilk (or milk + 1 tsp lemon juice)
1 tsp vanilla extract
1 ½ cups (about 2 small) peeled, finely diced apples (Honeycrisp or Granny Smith)
For the streusel topping:
½ cup (65g) all-purpose flour
¼ cup (50g) brown sugar
½ tsp cinnamon
¼ cup (55g) cold unsalted butter, cubed
Instructions
1. Prepare the streusel:
In a small bowl, mix flour, brown sugar, and cinnamon.
Cut in cold butter with a fork or fingers until crumbly.
Chill while you make the muffins.
2. Make the muffin batter:
Preheat oven to 375°F (190°C) and line a 12-cup muffin tin.
In a large bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another bowl, whisk melted butter, brown sugar, granulated sugar, eggs, buttermilk, and vanilla until smooth.
Pour wet ingredients into dry and stir just until combined.
Fold in diced apples.
3. Assemble and bake:
Divide batter evenly among muffin cups (about ¾ full).
Sprinkle each with streusel topping.
Bake for 18–22 minutes, or until golden and a toothpick comes out clean.
Cool in the pan 5 minutes, then transfer to a rack.
4. Add the caramel drizzle:
Melt caramels with milk in a small saucepan (or microwave 30-second intervals), stirring until smooth.
Drizzle over cooled muffins.
Serving Tips
Serve slightly warm for gooey caramel goodness.
Excellent with a cup of coffee or chai.
Store covered at room temperature for 2 days, or refrigerate up to 5 days.
