Description

Cardamom Buns with Almond Filling are a type of sweet pastry that has gained popularity, particularly in Scandinavian countries. These buns are known for their unique combination of fragrant cardamom and smooth, sweet almond paste, creating a flavor that is both comforting and sophisticated. The dough is rich, buttery, and soft, and the filling is sweet with a nutty depth, making them a perfect balance of textures and flavors.

Ingredients

Scale

For the Dough:

  • 4 cups all-purpose flour
  • 1/2 cup sugar
  • 2 1/4 teaspoons (1 packet) instant yeast
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 1 cup milk (warm)
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs

For the Almond Filling:

  • 1 cup almond paste (or marzipan)
  • 1/4 cup unsalted butter (softened)
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

For Topping:

  • 1 egg (beaten, for egg wash)
  • Sliced almonds (for sprinkling)
  • Powdered sugar (for dusting, optional)

Instructions

1. Prepare the Dough:

  • In a large bowl, combine the flour, sugar, instant yeast, ground cardamom, and salt.
  • In a separate bowl, mix the warm milk, melted butter, and eggs until well combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring until a soft dough forms.

2. Knead the Dough:

  • Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

3. Make the Almond Filling:

  • In a bowl, mix the almond paste, softened butter, powdered sugar, and vanilla extract until smooth and well combined.

4. Shape the Buns:

  • After the dough has risen, punch it down and turn it out onto a floured surface.
  • Roll the dough into a rectangle (about 12×18 inches).
  • Spread the almond filling evenly over the dough.
  • Roll the dough tightly from the long side to form a log.
  • Cut the log into 12 equal pieces.

5. Second Rise:

  • Place the cut buns in a greased baking dish or on a parchment-lined baking sheet.
  • Cover and let them rise for another 30-45 minutes.

6. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

7. Bake:

  • Brush the tops of the buns with the beaten egg and sprinkle with sliced almonds.
  • Bake for 20-25 minutes, or until golden brown.

8. Cool and Serve:

  • Remove from the oven and let cool slightly.
  • Optionally, dust with powdered sugar before serving.

Notes

For an extra indulgent touch, brush the warm buns with a cardamom sugar syrup right after baking, and sprinkle with sliced almonds or pearl sugar for added texture and sweetness
