Instructions

1. Make the Dough

  1. Combine flour, sugar, yeast, salt, cardamom, and orange zest.

  2. Add warm milk and eggs; mix until a sticky dough forms.

  3. Knead 5–7 minutes (or 4 minutes in a mixer).

  4. Gradually incorporate butter until smooth and elastic.

  5. Cover and let rise 1½–2 hours until doubled.


2. Prepare the Filling

  • Mix butter, brown sugar, cardamom, orange zest, and salt until spreadable.


3. Shape the Babka

  1. Roll dough into a 10×16-inch rectangle.

  2. Spread filling evenly, leaving a ½-inch border.

  3. Roll tightly from the long side into a log.

  4. Slice lengthwise to expose layers.

  5. Twist the two halves together, cut sides facing up.

  6. Place in a parchment-lined loaf pan.


4. Second Rise

  • Cover and let rise 30–45 minutes until puffy.


5. Bake

  1. Preheat oven to 350°F (175°C).

  2. Bake 40–45 minutes, tenting with foil if browning too quickly.


6. Make the Orange Syrup

  1. Simmer sugar, orange juice, and peel 5 minutes until syrupy.

  2. Remove peel.


7. Finish

  • Brush hot babka generously with warm syrup.

  • Cool in pan 15 minutes, then transfer to a rack.
