Description
Carrot cake has long been a beloved dessert around the world, and carrot bread is a natural evolution of that delicious concept. The addition of coconut to carrot bread brings an extra layer of flavor and texture that elevates the traditional recipe. Coconut, with its natural sweetness and chewy consistency, complements the carrots and spices beautifully.
Ingredients
-
1 1/2 cups all-purpose flour
-
1 teaspoon baking soda
-
1/2 teaspoon baking powder
-
1/4 teaspoon salt
-
1 teaspoon ground cinnamon
-
1/2 teaspoon ground nutmeg
-
2 large eggs
-
1/2 cup vegetable oil
-
1/2 cup packed brown sugar
-
1/4 cup honey or maple syrup
-
1 teaspoon vanilla extract
-
1 1/2 cups grated carrots (about 3 medium carrots)
-
1/2 cup shredded coconut (unsweetened)
-
1/2 cup chopped walnuts or pecans (optional)
-
1/4 cup raisins or currants (optional)
Instructions
Preheat your oven to 350°F (175°C). This is an important step to ensure your bread bakes evenly. Grease or line a 9×5-inch loaf pan with parchment paper to make removing the bread later much easier.
In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg. These dry ingredients will provide the structure and flavor for your bread. Be sure to mix them well so that the baking soda and spices are evenly distributed throughout the flour.
In a separate bowl, whisk together the eggs, vegetable oil, brown sugar, honey (or maple syrup), and vanilla extract. Beat until smooth and well combined. This will form the wet base of your batter and provide the sweetness and richness to balance the dry ingredients.
Now, it’s time to fold in the grated carrots and shredded coconut. These ingredients will bring moisture and texture to the bread, ensuring it’s both fluffy and moist. Stir gently to incorporate them into the wet mixture.
Gradually fold the wet mixture into the dry ingredients. Stir gently until just combined. Be careful not to overmix, as this can result in dense bread. The batter should be thick and slightly lumpy.
If you’re using walnuts or pecans and raisins (or currants), fold them in gently at this stage. These optional ingredients add extra flavor and texture, making your bread even more satisfying.
Pour the batter into your prepared loaf pan, spreading it evenly. Smooth the top with a spatula. Bake the bread for 55-65 minutes, or until a toothpick inserted into the center comes out clean. The baking time may vary depending on your oven, so keep an eye on it and perform the toothpick test to ensure it’s fully baked.
Once the bread is done, remove it from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer the bread to a wire rack to cool completely. This will help the bread set and make it easier to slice.
