Ingredients
1 ½ cups (190 g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 ½ tsp ground ginger
1 tsp ground cinnamon
½ tsp ground nutmeg
½ cup (120 ml) vegetable oil (or melted butter)
½ cup (100 g) brown sugar
¼ cup (50 g) granulated sugar
2 large eggs
1 tsp vanilla extract
1 ½ cups (150 g) finely grated carrots
2 tbsp fresh ginger, finely grated (or 1 tbsp for milder flavor)
¼ cup (60 ml) yogurt or buttermilk
½ cup (60 g) chopped walnuts or pecans (optional)
Instructions
Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
In a bowl, whisk flour, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg.
In another bowl, whisk oil, brown sugar, granulated sugar, eggs, and vanilla until smooth.
Stir in grated carrots, fresh ginger, and yogurt/buttermilk.
Fold in dry ingredients gently, then add nuts if using.
Pour batter into prepared pan and smooth top.
Bake 45–55 minutes, until a tester inserted in the center comes out clean.
Cool in pan for 10 minutes, then transfer to a wire rack.
