Ingredients
For the Filling:

Instructions
Start by steaming or boiling the cauliflower florets for about 8-10 minutes, or until they are soft. Once they’re tender, drain and mash them with a fork, or blend them lightly if you prefer a smoother texture. It’s important to leave a little texture for bite. The cauliflower will form the base of your filling, providing a creamy consistency that complements the other ingredients perfectly.
In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until it softens. Next, add the garlic and cook for an additional 30 seconds, just until fragrant. Stir in the spinach and cook it for about 2-3 minutes until it wilts down.
Once the spinach is wilted, add the steamed and mashed cauliflower to the skillet. Stir everything together, then mix in the feta cheese, parmesan (if using), oregano, nutmeg, salt, and pepper. Let everything cook together for another 2-3 minutes, stirring occasionally to ensure all the flavors combine. Taste and adjust the seasoning as needed.
While the filling is cooking, take the slices of bread and butter each slice lightly with unsalted butter or plant-based butter (depending on your preference). Drizzle a little olive oil over each slice for added crispiness when grilling.
Heat a grill pan or skillet over medium heat. Place the buttered bread slices on the pan and grill them until golden brown on one side, about 2-3 minutes. Flip the bread slices and spoon the cauliflower filling generously onto each slice. Press the bread down lightly to ensure the filling melts evenly into the bread.
Grill the filled bread slices for another 2-3 minutes, or until both sides are crispy and the filling is heated through. For extra melty cheese, you can cover the pan with a lid for a minute to help the cheese melt completely.
Once done, remove the melts from the heat and drizzle them with a little lemon juice for a fresh, tangy finish. Garnish with fresh dill or parsley and serve hot.
