Description

Broccoli has been around for centuries, originally cultivated by the ancient Romans. Its versatility and nutrient-dense profile have made it a staple in many kitchens across the world. As for the specific combination of charred broccoli and feta cheese, this modern twist on a traditional vegetable salad has gained popularity in Mediterranean cuisine.

Ingredients

Scale

For the salad:

  • 2 heads of broccoli, cut into long florets with stems intact
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper
  • 100g feta cheese, crumbled
  • ¼ small red onion, finely sliced
  • 2 tbsp chopped fresh mint or parsley
  • 2 tbsp toasted pistachios or almonds (optional)

For the lemon dressing:

  • Juice of 1 lemon
  • Zest of ½ lemon
  • 3 tbsp extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 small garlic clove, finely grated
  • Salt and pepper to taste

Instructions

  1. Char the broccoli: Heat a grill pan or cast iron skillet over high heat until smoking. Toss broccoli florets with olive oil, salt, and pepper. Grill for 8–10 minutes, turning occasionally, until edges are deeply charred and stems are tender-crisp. Set aside to cool slightly.
  2. Make the dressing: In a small bowl, whisk together lemon juice, zest, olive oil, mustard, garlic, salt, and pepper until emulsified.
  3. Assemble the salad: In a large bowl, combine charred broccoli, red onion, herbs, and half the feta. Drizzle with dressing and toss gently.
  4. Plate and finish: Arrange on a serving platter. Top with remaining feta and nuts if using. Serve warm or at room temperature.

Notes

This vibrant salad balances smoky, charred broccoli with tangy feta and bright lemon. Serve it warm or at room temperature, and for extra crunch, sprinkle with toasted almonds or pumpkin seeds just before serving.
