Instructions
Preheat the oven
Preheat oven to 375°F (190°C) and lightly grease a casserole dish.Cook the beef
Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.Add aromatics
Stir in diced onion and cook 3–4 minutes until softened. Add garlic and cook for 30 seconds.Season the mixture
Add taco seasoning, diced tomatoes, corn, and black beans. Stir well to combine.Add rice and liquid
Mix in uncooked rice and beef broth. Bring to a gentle simmer and cook for about 5 minutes.Assemble the casserole
Transfer the mixture to the prepared baking dish. Spread sour cream and salsa over the top, then sprinkle with shredded cheddar cheese.Bake
Cover with foil and bake for 20 minutes, then remove foil and bake another 5–10 minutes until cheese is melted and bubbly.Serve
Garnish with chopped cilantro or green onions and serve warm.
