  • ½ small red onion, finely chopped

  • ÂĽ cup chopped fresh herbs (such as oregano, mint, and parsley)

  • ½ cup crushed multigrain pita chips (plus more for serving)

  • 1 cup crumbled feta cheese

  • 1 tbsp finely chopped Kalamata olives

Dressing Ingredients

  • 3 tbsp lemon juice

  • 2 tbsp extra-virgin olive oil

  • ½ tsp Dijon mustard

  • 1 small garlic clove, grated

  • â…› tsp cracked black pepper

  • â…› tsp salt


Instructions

Step 1: Prepare the Dressing

In a large salad bowl:

  • Whisk together the lemon juice, extra-virgin olive oil, Dijon mustard, grated garlic, salt, and black pepper.

  • Make sure everything is well emulsified so the flavor is consistent throughout the salad.

Tip: You can make the dressing ahead of time and store it in the fridge for up to 3 days.

Step 2: Chop the Vegetables and Herbs

  • Dice the cherry tomatoes, cucumber, red bell pepper, and red onion into small, even pieces.

  • Finely chop your fresh herbs (parsley, mint, and oregano work best for this flavor profile).

  • Drain and rinse the chickpeas thoroughly.

Step 3: Toss the Salad

Add the following to the bowl with the dressing:

  • Chickpeas

  • Chopped vegetables

  • Feta cheese

  • Kalamata olives

  • Fresh herbs

Step 4: Add the Crunch

Right before serving:
