Ingredients

- 1 cup dark or semisweet chocolate chips

Instructions
1. Make the Batter
- Beat eggs and sugar until pale and thick (about 5 minutes).
- Add vanilla and lemon zest, mix to combine.
- Sift in flour and baking powder. Fold gently until just combined.
- Stir in melted butter in a slow stream, folding until smooth.
- Cover and chill batter for at least 1 hour (or overnight for best rise).
2. Bake the Madeleines
- Preheat oven to 375°F (190°C).
- Grease madeleine pan with butter and dust lightly with flour.
- Spoon or pipe batter into molds, filling ¾ full.
- Bake for 10–12 minutes until golden and puffed.
- Cool in pan for 5 minutes, then transfer to wire rack.
3. Dip in Chocolate
- Melt chocolate and oil together using a double boiler or microwave.
- Dip cooled madeleines halfway into chocolate.
- Place on parchment and let set at room temp or refrigerate for 10 minutes.
