  • 1 cup dark chocolate, chopped
  • 1/2 cup unsalted butter
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 3/4 cup egg whites (about 4 eggs)
  • 1/4 cup sugar (for meringue)

Instructions

  • Preheat the oven to 350°F (175°C). Grease and line an 8-inch (20 cm) square baking pan with parchment paper.
  • In a heatproof bowl, melt the dark chocolate and butter together over a double boiler or in the microwave, stirring frequently until smooth.
  • Remove from the heat and whisk in the sugar until combined. Add the eggs one at a time, whisking after each addition, then stir in the vanilla extract.
  • Sift in the flour, salt, and baking powder. Stir until just combined.
  • In a separate clean bowl, whisk the egg whites until soft peaks form. Gradually add the sugar and whisk until stiff peaks form.
  • Gently fold the meringue into the brownie batter, being careful not to deflate the meringue too much.
  • Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes, or until the top is set, and a toothpick inserted into the center comes out with a few moist crumbs.
  • Allow the cake to cool completely in the pan before cutting into squares.
