Instructions

  1. Melt the Chocolate:
    In a heatproof bowl set over a saucepan of simmering water (or in the microwave in 20-second bursts), melt the chocolate chips and butter together. Stir until smooth.
    Remove from heat and let cool slightly.

  2. Prepare the Egg Mixture:
    In a separate bowl, whisk together the egg yolks, sugar, and salt until pale and creamy.
    Slowly whisk in the melted chocolate and peppermint extract until well combined.

  3. Whip the Egg Whites:
    In a clean bowl, beat the egg whites until stiff peaks form.
