Instructions

  1. Crush the cookies:

    • Place the gingerbread cookies in a food processor and pulse until fine crumbs form.

    • Reserve about 2 tablespoons of crumbs for topping if you’d like.

    • In a large bowl, combine the cookie crumbs, cream cheese, cinnamon, ginger, and vanilla extract.
