Ingredients
2 cups (about 200g) gingerbread cookies or gingersnaps (crushed finely)
4 oz (115g) cream cheese, softened
1 tsp ground cinnamon
½ tsp ground ginger (optional, for extra spice)
1 tsp vanilla extract
8 oz (225g) white chocolate or candy coating, melted

Instructions
Crush the cookies:
Place the gingerbread cookies in a food processor and pulse until fine crumbs form.
Reserve about 2 tablespoons of crumbs for topping if you’d like.
Make the truffle mixture:
In a large bowl, combine the cookie crumbs, cream cheese, cinnamon, ginger, and vanilla extract.
Mix until the texture resembles cookie dough and everything is well blended.
Chill the mixture in the refrigerator for about 30 minutes to make it easier to roll.
Form the truffles:
Roll the dough into 1-inch balls (about the size of a walnut).
Place them on a parchment-lined baking sheet and freeze for 20–30 minutes, or until firm.
Coat with chocolate:
Melt the white chocolate in the microwave or using a double boiler until smooth.
Dip each truffle into the melted chocolate, using a fork to lift and tap off excess.
Place them back on parchment paper.
Decorate:
Immediately sprinkle with cookie crumbs, sprinkles, or drizzle with contrasting chocolate before the coating hardens.
Chill and serve:
Refrigerate for at least 15 minutes to set.
Store in an airtight container in the fridge for up to 1 week (or freeze for up to 2 months).
