The Gingerbread Latte Loaf is a loaf-cake that captures the flavour of a gingerbread latte in cake form. Imagine spiced loaf cake infused with ground ginger, cinnamon, cloves, nutmeg; sweetened with dark brown sugar and unsulphured molasses; and boosted with a splash of strong brewed coffee (or espresso) plus milk and vanilla. The texture is moist and flavourful, and optional add-ins like mini chocolate chips, chopped pecans or bits of candied ginger elevate the experience. A glaze made with powdered sugar, brewed espresso and a hint of cinnamon (and optionally more molasses) adds a finishing sweet touch.
Ingredients
Dry:
1 ¾ cups all-purpose flour (or 1:1 gluten-free blend)
1 ½ tsp ground ginger
1 tsp ground cinnamon
¼ tsp ground cloves
¼ tsp nutmeg
1 tsp baking soda
½ tsp baking powder
½ tsp salt
Wet:
½ cup unsalted butter, melted (or coconut oil for dairy-free)
½ cup dark brown sugar (or coconut sugar)
½ cup unsulphured molasses
2 large eggs, room temp
½ cup strong brewed coffee or espresso, cooled
¼ cup milk (dairy or nondairy)
1 tsp vanilla extract
Optional add-ins:
¼ cup mini chocolate chips or chopped dark chocolate
½ cup chopped pecans or walnuts
2–3 tbsp candied ginger pieces
Instructions
Prep oven & pan
Preheat to 350°F (175°C). Grease and line a 9×5” loaf pan with parchment.Mix dry ingredients
In a bowl, whisk flour, spices, baking soda, baking powder, and salt.Mix wet ingredients
In a large bowl, whisk melted butter, brown sugar, and molasses. Add eggs, coffee, milk, and vanilla; whisk until smooth.Combine
Add dry ingredients to wet and gently fold until just combined. Stir in optional add-ins.Bake
Pour into pan, smooth top, and bake 45–55 minutes, or until a toothpick comes out clean. (Tent with foil if browning too quickly.)Cool & glaze
Cool in pan 10 min, then transfer to rack. Whisk glaze ingredients and drizzle over cooled loaf.
