Instructions

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Peaches:
    • In a bowl, toss the peach slices with the brown sugar, melted butter, and cinnamon until evenly coated.
  3. Prepare the Puff Pastry:
    • Roll out the thawed puff pastry on a lightly floured surface. Cut the pastry into squares or circles (about 4-6 inches in size, depending on your preference).
  4. Assemble the Upside-Down Pies:
    • On the prepared baking sheet, arrange a small cluster of peach slices (about 4-5 slices) in the center of where each puff pastry piece will go.
    • Lay a puff pastry square or circle over the peach slices, gently pressing down around the edges to seal them slightly. The peaches should be completely covered by the pastry.
    • Brush the top of each pastry with the beaten egg and, if desired, sprinkle with a little granulated sugar for extra sweetness and crunch.
  5. Bake:
    • Bake in the preheated oven for 18-22 minutes, or until the puff pastry is golden brown and puffed.
  6. Flip and Serve:
    • Let the pastries cool for about 5 minutes. Carefully flip each pastry over using a spatula so the caramelized peaches are on top.
