Description

At their core, Cinnamon Roll Cheesecake Bites are a clever hybrid of a cinnamon roll and a cheesecake. Imagine a soft cinnamon roll dough that’s been shaped into little cups, filled with a smooth and creamy cheesecake mixture, baked to golden perfection, and topped with a sweet glaze. The result? A bite-sized dessert that’s creamy, gooey, and bursting with flavor.

Ingredients

Scale

For the Cheesecake Filling:

  • 8 oz (225 g) cream cheese, softened

  • ¼ cup granulated sugar

  • 1 tsp vanilla extract

For the Cinnamon Roll Base:

  • 1 can (8-count) refrigerated cinnamon rolls (with icing packet)
    – or use homemade or puff pastry if you prefer

Optional Cinnamon Sugar (for extra flavor):

  • 2 tbsp melted butter

  • 2 tbsp brown sugar

  • ½ tsp ground cinnamon

For the Glaze:

  • Use the icing that comes with the cinnamon rolls
    or mix your own:

    • ½ cup powdered sugar

    • 12 tbsp milk

    • ¼ tsp vanilla extract

Instructions

  1. Preheat Oven
Preheat to 350°F (175°C). Grease a mini muffin pan or line with paper cups.

  2. Prepare the Cheesecake Filling
In a bowl, beat cream cheese, sugar, and vanilla until smooth and creamy. Set aside.

  3. Prepare the Cinnamon Roll Cups

    • Separate the cinnamon rolls. Cut each into halves (or quarters if large).

    • Press each piece into a muffin cup, flattening slightly to form a small “cup” shape.

  4. Add the Filling
Spoon about 1 teaspoon of cheesecake mixture into the center of each cinnamon roll cup.

  5. (Optional) Add Cinnamon Sugar Mix
Drizzle or brush melted butter and sprinkle a little cinnamon sugar mixture on top for extra caramelized flavor.

  6. Bake
Bake for 15–18 minutes, or until golden brown and the cheesecake filling is set.

  7. Cool and Glaze
Let cool slightly. Drizzle with the icing that came with the cinnamon rolls (or homemade glaze).

  8. Serve & Enjoy!
Serve warm or at room temperature. Store leftovers in the fridge for up to 3 days — reheat slightly before serving for gooey perfection.

Notes

For an extra indulgent touch, drizzle the cheesecake bites with warm cream cheese glaze or caramel sauce before serving. You can also sprinkle a little cinnamon sugar on top right after baking for added sweetness and crunch. Serve them warm or chilled for the perfect bite-sized dessert!
