  • ¾ cup (150 g) granulated sugar

  • 2 large eggs

  • 2 tsp pure vanilla extract

  • ¾ cup (180 ml) sour cream or Greek yogurt (adds moisture!)

Optional Cinnamon Swirl Layer

  • ¼ cup (50 g) brown sugar

  • 1 tsp ground cinnamon

For the Glaze (Optional)

  • ½ cup powdered sugar

  • 12 tbsp milk or cream

  • ¼ tsp vanilla extract


Instructions

1. Preheat & Prep

  • Preheat oven to 350°F (175°C).

  • Grease and flour an 8×8-inch or 9-inch round baking pan (or line with parchment).


2. Make the Streusel

  • In a small bowl, combine flour, brown sugar, cinnamon, and salt.

  • Cut in cold butter using a fork or your fingers until crumbly (like coarse sand).

  • Refrigerate until ready to use.


3. Mix the Cake Batter

  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

  • In a large bowl, beat butter and sugar together until light and fluffy (about 2 minutes).

  • Add eggs one at a time, then mix in vanilla.

  • Stir in sour cream.

  • Add dry ingredients and mix until just combined — do not overmix!


4. Assemble the Layers

  • Spread half of the batter into the prepared pan.

  • (Optional) Sprinkle with the cinnamon-sugar swirl mixture.

  • Spread remaining batter on top.

  • Sprinkle the streusel topping evenly over the surface.


5. Bake
