Ingredients

6 tbsp (85 g) cold unsalted butter, cubed
For the Cake
1 ½ cups (190 g) all-purpose flour
2 tsp baking powder
¼ tsp baking soda
½ tsp salt
½ cup (115 g) unsalted butter, softened
¾ cup (150 g) granulated sugar
2 large eggs
2 tsp pure vanilla extract
¾ cup (180 ml) sour cream or Greek yogurt (adds moisture!)
Optional Cinnamon Swirl Layer
¼ cup (50 g) brown sugar
1 tsp ground cinnamon
For the Glaze (Optional)
½ cup powdered sugar
1–2 tbsp milk or cream
¼ tsp vanilla extract
Instructions
1. Preheat & Prep
Preheat oven to 350°F (175°C).
Grease and flour an 8×8-inch or 9-inch round baking pan (or line with parchment).
2. Make the Streusel
In a small bowl, combine flour, brown sugar, cinnamon, and salt.
Cut in cold butter using a fork or your fingers until crumbly (like coarse sand).
Refrigerate until ready to use.
3. Mix the Cake Batter
In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
In a large bowl, beat butter and sugar together until light and fluffy (about 2 minutes).
Add eggs one at a time, then mix in vanilla.
Stir in sour cream.
Add dry ingredients and mix until just combined — do not overmix!
4. Assemble the Layers
Spread half of the batter into the prepared pan.
(Optional) Sprinkle with the cinnamon-sugar swirl mixture.
Spread remaining batter on top.
Sprinkle the streusel topping evenly over the surface.
5. Bake
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Let cool in pan for at least 20 minutes.
6. Glaze (Optional)
Whisk powdered sugar, milk, and vanilla together until smooth.
Drizzle over the cooled cake before serving.
