  • 1 large fennel bulb, thinly sliced (fronds reserved)

  • 2 oranges or grapefruits, peeled and segmented

  • 2 ripe avocados, sliced

  • 4 cups mixed greens or arugula

  • ¼ cup pomegranate seeds or dried cranberries

  • ¼ cup toasted almonds or pistachios

  • Optional: ¼ cup crumbled feta or goat cheese

Citrus Vinaigrette

  • 3 tbsp fresh citrus juice (orange, grapefruit, or lemon)

  • 1 tsp zest (from same citrus)

  • 1 tsp honey or maple syrup

  • 1 tsp Dijon mustard

  • ¼ cup extra-virgin olive oil

  • Salt & freshly ground black pepper


Instructions

  • Prep fennel: Slice very thin (use a mandoline if possible). Toss lightly with a pinch of salt and citrus juice to soften.

  • Make vinaigrette: Whisk citrus juice, zest, honey, Dijon, salt, and pepper. Slowly whisk in olive oil until emulsified.

  • Assemble salad: In a large bowl, combine greens, fennel, citrus segments, and avocado.

  • Drizzle with vinaigrette and gently toss.

  • Finish with nuts, seeds, cheese (if using), and chopped fennel fronds.
