At its core, it combines thinly sliced fennel with sweet citrus segments and ripe avocado, layered over peppery greens and finished with a light citrus vinaigrette. Ingredients
Salad
1 large fennel bulb, thinly sliced (fronds reserved)
2 oranges or grapefruits, peeled and segmented
2 ripe avocados, sliced
4 cups mixed greens or arugula
¼ cup pomegranate seeds or dried cranberries
¼ cup toasted almonds or pistachios
Optional: ¼ cup crumbled feta or goat cheese
Citrus Vinaigrette
3 tbsp fresh citrus juice (orange, grapefruit, or lemon)
1 tsp zest (from same citrus)
1 tsp honey or maple syrup
1 tsp Dijon mustard
¼ cup extra-virgin olive oil
Salt & freshly ground black pepper
Instructions
Prep fennel: Slice very thin (use a mandoline if possible). Toss lightly with a pinch of salt and citrus juice to soften.
Make vinaigrette: Whisk citrus juice, zest, honey, Dijon, salt, and pepper. Slowly whisk in olive oil until emulsified.
Assemble salad: In a large bowl, combine greens, fennel, citrus segments, and avocado.
Drizzle with vinaigrette and gently toss.
Finish with nuts, seeds, cheese (if using), and chopped fennel fronds.
