Instructions

  1. Preheat oven to 175°C / 350°F.
    Grease and line a 9-inch round pan with parchment.

  2. Mix dry ingredients
    In a bowl, whisk polenta, flour, baking powder, baking soda, and salt.

  3. Mix wet ingredients
    In a large bowl, whisk eggs and sugar until pale.
    Add olive oil, yogurt, citrus zest, juice, and vanilla. Mix until smooth.

  4. Combine
    Gently fold dry ingredients into wet just until incorporated.

  5. Bake
    Pour batter into pan and smooth the top.
    Bake 40–45 minutes, until golden and a toothpick comes out clean.

  6. Optional syrup
    Heat citrus juice and sugar until dissolved.
    Spoon over warm cake for extra moisture and flavor.

  7. Cool & serve
    Let cool 15 minutes before removing from pan. Dust with powdered sugar if desired.
