Instructions

1. Prep the Steak:

Start by placing the ribeye steak in the freezer for about 30 minutes. This will firm up the meat and make it easier to slice thinly. Once it’s partially frozen, use a sharp knife to slice the steak against the grain as thinly as possible. Thin slices are essential for achieving the tender, melt-in-your-mouth texture of a great Philly cheesesteak.

2. Sauté the Vegetables:

Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the thinly sliced onions and bell peppers (if using) and sauté them for 8-10 minutes, until they are softened and lightly caramelized. Remove the veggies from the skillet and set them aside.

3. Cook the Steak:

In the same skillet, add the remaining tablespoon of vegetable oil and increase the heat to medium-high. Add the thinly sliced ribeye steak to the pan in a single layer.
