Instructions
1. Make the Chia Pudding
In a bowl, whisk together chia seeds, coconut milk, maple syrup, vanilla, and salt.
Stir well and let sit for 10 minutes. Stir again to prevent clumps.
Cover and refrigerate for at least 4 hours (or overnight) until thick and pudding-like.
2. Prepare the Mango Layer
In a blender, puree 1 ½ mangoes with lime juice (and honey if needed) until smooth.
Dice the remaining ½ mango into small cubes for topping.
3. Assemble the Parfaits
In glasses or jars, layer chia pudding and mango puree alternately.
Top with diced mango, toasted coconut, and granola.
Garnish with fresh mint.
