- 2 tbsp dry white wine
- 1 tbsp olive oil
- Salt & pepper
Instructions
- Preheat oven to 400°F (200°C). Position racks in upper and lower thirds.
- Make the salsa: Combine tomatoes, capers, 3 tbsp olive oil, lemon zest & juice, shallot, basil, salt, and pepper in a bowl. Let it sit to develop flavor.
- Prepare parchment: Cut four 16-inch sheets. Fold each in half and open like a book.
- Layer veggies: Toss corn and green beans with 1 tbsp olive oil, salt, and pepper. Divide among parchment sheets.
- Add cod: Season fillets with salt. Place on veggie mounds. Dot with butter and drizzle with wine.
- Seal packets: Fold parchment over and crimp edges tightly.
- Bake for 15 minutes until parchment puffs and fish is cooked through.
