  • 2 tbsp chopped fresh basil
  • Salt & pepper to taste

For the Packets:

  • 1½ cups corn kernels (fresh or thawed)
  • 8 oz thin green beans, trimmed and chopped
  • 4 skinless cod fillets (6 oz each)
  • 2 tbsp unsalted butter, cut into small pieces
  • 2 tbsp dry white wine
  • 1 tbsp olive oil
  • Salt & pepper

Instructions

  1. Preheat oven to 400°F (200°C). Position racks in upper and lower thirds.
  2. Make the salsa: Combine tomatoes, capers, 3 tbsp olive oil, lemon zest & juice, shallot, basil, salt, and pepper in a bowl. Let it sit to develop flavor.
  3. Prepare parchment: Cut four 16-inch sheets. Fold each in half and open like a book.
  4. Layer veggies: Toss corn and green beans with 1 tbsp olive oil, salt, and pepper. Divide among parchment sheets.
  5. Add cod: Season fillets with salt. Place on veggie mounds. Dot with butter and drizzle with wine.
  6. Seal packets: Fold parchment over and crimp edges tightly.
  7. Bake for 15 minutes until parchment puffs and fish is cooked through.
  8. Serve: Carefully open packets and spoon salsa over each fillet.
