Muffin Batter:

  • 1 ¾ cups (220g) all-purpose flour

  • ¾ cup (150g) granulated sugar

  • 2 tsp baking powder

  • ½ tsp salt

  • ½ cup (120ml) vegetable oil or melted butter

  • 2 large eggs, room temperature

  • ½ cup (120ml) milk (any kind)

  • 2 tsp vanilla extract

Cream Cheese Swirl:

  • 6 oz (170g) cream cheese, softened

  • 3 tbsp granulated sugar (or powdered sugar)

  • 1 tsp vanilla extract

  • 1 egg yolk (helps it bake creamy, not rubbery)


Instructions

1. Prep

  • Preheat oven to 375°F (190°C).

  • Line or grease a 12-cup muffin tin.

2. Make Cream Cheese Swirl

  • Beat cream cheese, sugar, vanilla, and egg yolk until smooth. Set aside.

3. Mix Muffin Batter

  • In one bowl, whisk flour, sugar, baking powder, and salt.

  • In another, whisk oil, eggs, milk, and vanilla.

  • Pour wet into dry and stir just until combined (don’t overmix).

4. Fill Muffin Cups

  • Fill each muffin cup about â…” full with batter.

  • Spoon 1 heaping teaspoon of cream cheese mixture on top of each.

  • Use a toothpick or knife to gently swirl (don’t fully mix in).

5. Bake

  • Bake 17–20 minutes, or until muffins spring back and a toothpick (in the batter part) comes out clean.

  • Cool 10 minutes in pan, then transfer to a rack.

Notes

For a delightful finish, drizzle a simple vanilla glaze over the warm Cream Cheese Swirl Muffins or sprinkle the tops with cinnamon sugar before baking. Adding fresh berries or lemon zest to the batter can also enhance flavor and texture.
