Instructions

  • Sauté the base In a large pot, melt 1 tbsp butter over medium heat. Add chopped onion and cook until soft (2–3 minutes).
  • Make the roux Add ¼ cup butter and melt. Stir in flour and whisk constantly for 1 minute to form a smooth paste.
  • Add liquids Slowly whisk in chicken broth, then half-and-half. Cook for 2–3 minutes, whisking to remove lumps.
  • Simmer the veggies Stir in broccoli, carrots, salt, pepper, paprika, garlic powder, and mustard. Reduce heat and simmer 10–15 minutes until veggies are tender.
  • Blend (optional) Use an immersion blender for a smoother texture, or leave chunky for a rustic feel.
  • Add cheese Stir in cheddar cheese a handful at a time until melted and creamy. Taste and adjust seasoning.
  • Serve hot Garnish with extra cheese, black pepper, or crispy croutons.
