Instructions
Prepare the Jalapeños:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper
- Cut jalapeños – Slice each jalapeño in half lengthwise, keeping stems intact if desired
- Remove seeds – Use a small spoon or knife to scrape out seeds and white membranes (wear gloves!)
- Pat dry – Thoroughly dry jalapeño halves with paper towels
Make the Greek Yogurt Filling:
- Drain yogurt – Place Greek yogurt in fine-mesh strainer for 15 minutes to remove excess liquid
- Mix base – In a large bowl, combine drained Greek yogurt and softened cream cheese until smooth
- Add cheeses – Fold in cheddar and Monterey Jack cheeses
- Season – Add green onions, garlic, onion powder, smoked paprika, cayenne (if using), salt, and pepper
