Description

At its core, Green Goddess Silken Tofu Pasta is a vegan spin on the beloved Green Goddess dressing—a California classic first invented in the 1920s at the Palace Hotel in San Francisco. Traditionally, the dressing combines mayonnaise, sour cream, anchovies, and a burst of herbs to create a tangy, creamy green sauce.


Ingredients

  • 400g canned chickpeas, drained
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • 250g gluten-free red lentil fusilli (or pasta of choice)
  • 2 garlic cloves
  • ½ lemon, juiced
  • 1 ripe avocado, roughly chopped
  • 308g silken tofu
  • 50g cashew nuts
  • 1 tbsp tahini
  • 15g fresh basil, leaves picked
  • Salt, to taste
  • Optional: Nutritional yeast, hemp seeds, or arugula for garnish

Instructions

  • Crispy Chickpeas:
    • Preheat oven to 200°C (or air fryer to same temp).
    • Toss chickpeas with garlic powder, paprika, and salt.
    • Roast for 20–25 min (or air-fry 12–15 min), shaking halfway, until crisp. Set aside.
  • Cook Pasta:
    • Boil pasta in salted water for 8–10 min until al dente.
    • Drain and return to pot.
  • Make Green Goddess Sauce:
    • In a blender, combine garlic, lemon juice, avocado, silken tofu, cashews, tahini, and basil.
    • Blend until smooth and creamy. Season to taste.
  • Assemble:
    • Stir sauce into warm pasta.
    • Divide into bowls and top with crispy chickpeas and reserved basil leaves.

Notes

This creamy, plant-based pasta is a nourishing twist on comfort food. For extra freshness, garnish with lemon zest, fresh herbs, or a sprinkle of toasted nuts. It’s best enjoyed immediately, but leftovers can be stored in the fridge for up to 2 days and gently reheated with a splash of pasta water.
