Description

Creamy Miso Mushroom Pasta is a savory fusion dish that brings together the best of both Italian and Japanese cuisines. The key components—miso paste and mushrooms—are combined in a creamy sauce that coats pasta perfectly, resulting in a rich, comforting meal with layers of flavor.


Ingredients

  • 200g dried spaghetti or pasta of choice
  • 400g mixed mushrooms (shiitake, cremini, oyster, etc.), sliced
  • 3 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 3 tbsp white or red miso paste
  • 1 cup pasta cooking water (reserved)
  • ½ cup heavy cream (or soy milk for vegan)
  • ¼ cup grated parmesan (optional for vegan)
  • 1 tsp soy sauce
  • ½ tsp rice vinegar or lemon juice
  • Salt & black pepper to taste
  • Spring onions or chives, finely sliced (for garnish)
  • Optional: dash of dashi powder for extra umami

Instructions

  • Cook the Pasta Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1 cup of pasta water before draining.
  • Sauté the Mushrooms In a large skillet, melt butter over medium-high heat. Add mushrooms and let them brown undisturbed for 2–3 minutes. Stir and cook until golden. Add garlic and sauté for another minute.
  • Make the Sauce Lower heat to medium. Add miso paste and stir until it melts into the mushrooms. Pour in cream and reserved pasta water. Stir gently until the sauce thickens slightly.
  • Combine & Finish Add cooked pasta to the skillet. Toss to coat evenly. Stir in soy sauce, vinegar/lemon juice, and parmesan (if using). Season with salt and pepper.
  • Serve Plate the pasta and garnish with spring onions, extra parmesan, or a sprinkle of nori flakes for a Japanese twist.

Notes

For an extra flavor boost, sprinkle freshly chopped parsley or green onions before serving. You can also add a squeeze of lemon juice for brightness or top with a handful of toasted sesame seeds for a nutty crunch.
