  • lbs boneless skinless chicken breasts, thinly sliced
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ cup grated Parmesan cheese
  • 1 cup chopped spinach
  • ½ cup julienned sun-dried tomatoes, drained

Instructions

  • Sear the Chicken Heat olive oil in a large skillet over medium-high heat. Cook chicken 3–4 minutes per side until golden and cooked through (internal temp: 165°F). Remove and set aside.
  • Make the Sauce In the same skillet, add heavy cream, chicken broth, garlic powder, Italian seasoning, and Parmesan. Whisk and simmer 4–5 minutes until slightly thickened.
  • Add Veggies Stir in spinach and sun-dried tomatoes. Cook 1–2 minutes until spinach wilts.
  • Combine & Serve Return chicken to the skillet. Spoon sauce over the top and heat through. Serve over pasta, mashed potatoes, or crusty bread.

Notes

For an extra burst of flavor, serve this creamy Tuscan chicken over a bed of garlic mashed potatoes or al dente fettuccine. Don’t forget to garnish with freshly grated Parmesan and a sprinkle of chopped basil for that authentic Italian finish!
