For the Sweet Chili Dipping Sauce:

  • ½ cup sweet chili sauce (store-bought or homemade)

  • 1 tbsp honey

  • 1 tsp soy sauce

  • 1 tsp lime juice

  • ½ tsp grated fresh ginger (optional)

Mix all ingredients in a small bowl and refrigerate until serving.


Instructions

  1. Prepare the Filling:

    • In a medium bowl, gently combine avocado, onion, tomato, cilantro, lime juice, salt, and pepper.

    • Be careful not to mash the avocado too much — you want small chunks for texture.

  2. Assemble the Egg Rolls:

    • Lay one egg roll wrapper on a clean surface with a corner facing you (like a diamond).
