Instructions

  • Prep the Zucchini:
    • Grate zucchini and place in a clean towel.
    • Sprinkle with salt and let sit for 10 minutes.
    • Squeeze out excess moisture thoroughly.
  • Make the Batter:
    • In a bowl, combine zucchini, flour, Parmesan, egg, green onions, garlic, oregano, pepper, and paprika.
    • Mix until well combined.
  • Shape & Bake:
    • Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
    • Form small patties and place on the sheet.
    • Lightly spray or brush tops with olive oil.
    • Bake for 20–25 minutes, flipping halfway, until golden and crisp.
  • Prepare the Dip:
    • Mix yogurt, lemon juice, dill, salt, and pepper in a bowl.
    • Chill until ready to serve.
  • Serve:
    • Plate fritters with a swirl of dip or serve in mini ramekins.
    • Garnish with extra dill or edible flowers for flair.
