Ingredients

- 1 tbsp lemon juice
- 1 tbsp fresh dill, chopped
- Salt and pepper to taste
Instructions
- Prep the Zucchini:
- Grate zucchini and place in a clean towel.
- Sprinkle with salt and let sit for 10 minutes.
- Squeeze out excess moisture thoroughly.
- Make the Batter:
- In a bowl, combine zucchini, flour, Parmesan, egg, green onions, garlic, oregano, pepper, and paprika.
- Mix until well combined.
- Shape & Bake:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
- Form small patties and place on the sheet.
- Lightly spray or brush tops with olive oil.
- Bake for 20–25 minutes, flipping halfway, until golden and crisp.
- Prepare the Dip:
- Mix yogurt, lemon juice, dill, salt, and pepper in a bowl.
- Chill until ready to serve.
- Serve:
- Plate fritters with a swirl of dip or serve in mini ramekins.
- Garnish with extra dill or edible flowers for flair.
