Crispy Rice Sushi Bake Casserole

The Ultimate Guide to Crafting the Perfect Crispy Rice Sushi Bake Casserole

  • Author: David Andersson
  • Total Time: 45 minutes
  • Yield: 46 servings 1x

Description

To understand this dish, you have to think of it as a warm sushi salad in casserole form. Unlike traditional nigiri or maki, which are served cold and require precise rolling techniques, a sushi bake is intentionally rustic and approachable. It consists of a thick layer of vinegared sushi rice that acts as the foundation. This base is often seasoned with furikake—a dry Japanese seasoning usually containing seaweed flakes, sesame seeds, and dried fish—before being topped with a luscious mixture of cooked seafood and creamy binders.

Ingredients

Scale

Salmon

  • 2 salmon fillets (skin removed, cut into cubes)

  • 1½ tbsp cornstarch

  • Salt & black pepper (to taste)

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 2 tbsp oil (for cooking)

Hot Honey Sauce

  • 3 tbsp honey

  • 12 tsp chili flakes (adjust heat)

  • 1 tbsp soy sauce

  • 1 tsp sriracha or any hot sauce

  • 1 tsp rice vinegar or lemon juice

  • 1 minced garlic clove

Bowl Base & Toppings

  • 2 cups cooked rice (white, brown, or jasmine)

  • 1 avocado (sliced)

  • 1 cup cucumber (sliced or diced)

  • 1 carrot (shredded)

  • Edamame or steamed broccoli (optional)

  • Sesame seeds & green onions (for garnish)

Instructions

1️⃣ Season the rice

Mix warm rice with vinegar, sugar, and salt. Spread evenly into a lightly oiled baking dish and press down firmly.

2️⃣ Add furikake

Sprinkle a generous layer over the rice for classic sushi flavor.

3️⃣ Make the filling

In a bowl, combine seafood, cream cheese, mayo, sriracha, soy sauce, sesame oil, and green onions until creamy.

4️⃣ Assemble

Spread the seafood mixture evenly over the rice.

5️⃣ Bake

Bake at 200 °C (400 °F) for 15–20 minutes until hot and lightly golden on top.

6️⃣ Crisp the top (optional)

Broil 2–3 minutes or drizzle oil and bake a few extra minutes for a crispier surface.

7️⃣ Garnish & serve

Top with spicy mayo drizzle, avocado, sesame seeds, and more green onions.
Serve warm with nori sheets for scooping.
