Ingredients

  • Dark chocolate (70% cocoa) – 125g, chopped
  • Cocoa powder – 2 tbsp
  • Red chili powder – 1 tsp (adjust to taste)
  • Milk – 4 tbsp
  • Eggs – 2 (separated)
  • Caster sugar – 1 tbsp
  • Chocolate chips or curls – for garnish
  • Optional: pinch of sea salt or cayenne for extra depth

Instructions

  • Melt the chocolate Place chopped chocolate in a bowl over simmering water. Stir until smooth and glossy.
  • Make the chili paste Mix cocoa powder and chili powder with milk to form a smooth paste. Stir into melted chocolate.
  • Enrich the base Beat egg yolks and add to the chocolate mixture. Cook gently over simmering water for 5–7 minutes until slightly thickened.
  • Whip the whites Whisk egg whites until stiff. Add sugar and whisk again until glossy.
  • Fold and chill Gently fold the whipped egg whites into the chocolate mixture. Divide into ramekins and chill for at least 2 hours.
  • Serve Garnish with chocolate curls and a sprinkle of chili powder. Serve chilled.

Notes

For added depth, garnish with a pinch of smoked sea salt, a dollop of whipped cream, or a sprinkle of shaved dark chocolate.
