A Dark Chocolate-Dipped Coconut Macaroon is a delightful dessert that combines the tropical flavor of coconut with the richness of dark chocolate. The macaroons are essentially made from sweetened shredded coconut mixed with egg whites, condensed milk, and a touch of vanilla. After baking, they are dipped in dark chocolate to elevate their flavor and finish them with an irresistible glossy coating. Ingredients
3 cups sweetened shredded coconut
⅔ cup sweetened condensed milk (about half a can)
1 tsp vanilla extract (or almond extract for variation)
2 large egg whites
¼ tsp salt
6 oz dark chocolate (60–70%), chopped or in chips
Instructions
1️⃣ Preheat & Prep
Preheat oven to 325°F (165°C).
Line two baking sheets with parchment paper or silicone mats.
2️⃣ Mix the Coconut Base
In a large bowl, stir together:
Shredded coconut
Sweetened condensed milk
Vanilla extract
Mix until evenly moistened — it should be sticky but not runny.
3️⃣ Whip the Egg Whites
In a separate clean bowl, beat egg whites and salt with a hand mixer until stiff peaks form (about 2–3 minutes).
Gently fold the egg whites into the coconut mixture until combined.
4️⃣ Scoop & Bake
Using a tablespoon or small cookie scoop, drop mounds of the mixture onto the prepared baking sheets, spacing about 1 inch apart.
Bake 20–25 minutes, until golden brown around the edges.
Cool on the pan for 5 minutes, then transfer to a rack to cool completely.
5️⃣ Dip in Dark Chocolate
Melt dark chocolate in a heatproof bowl over simmering water (double boiler) or in 20-second microwave bursts, stirring until smooth.
Dip the bottoms of each cooled macaroon in melted chocolate.
Place them on parchment paper, chocolate-side down, to set.
Optional: drizzle extra chocolate on top for a decorative finish.
Chill briefly (about 15 minutes) to firm up.
Notes
For extra flair, sprinkle a pinch of sea salt or cocoa powder on the chocolate before it sets. You can also experiment with drizzling white chocolate for a decorative contrast or adding finely chopped nuts for extra crunch.
