¼ cup heavy cream
1 tsp sea salt
Instructions
1. Baking the Cake:
Preheat the oven to 350°F (175°C). Grease and flour three 8-inch cake pans.
Sift the flour, cocoa powder, baking powder, baking soda, and salt into a large bowl.
In a separate bowl, whisk together the eggs, granulated sugar, brown sugar, milk, melted butter, and vanilla extract until smooth.
Gradually stir the dry ingredients into the wet ingredients until just combined.
Dissolve the espresso powder in the boiling water, then add it to the batter and mix until smooth.
Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
Allow the cakes to cool completely in the pans before removing.
2. Preparing the Chocolate Fudge Ganache:
Heat the heavy cream in a saucepan until it begins to simmer.
Pour the hot cream over the chopped dark chocolate in a heatproof bowl. Let it sit for a minute and then stir until smooth.
Stir in the butter and vanilla extract until fully combined. Let it cool slightly.
3. Preparing the Salted Caramel Drizzle:
In a small saucepan, heat the granulated sugar over medium heat until it melts and turns amber in color (do not stir).
Add the butter and stir until smooth, then gradually add the heavy cream. Cook for an additional 1-2 minutes.
Remove from heat and stir in the sea salt. Allow it to cool slightly.
4. Assembling the Cake:
Once the cakes have cooled, place one layer on a serving plate. Spread a generous layer of chocolate fudge ganache on top.
Add the second cake layer and repeat the ganache process.
Place the third layer of cake on top and cover the entire cake with the remaining ganache.
Drizzle the salted caramel sauce over the top, adding a touch more sea salt for extra flavor.
