Instructions
- Prepare the Blackberry Filling:
- In a small saucepan over medium heat, combine the blackberries, granulated sugar, cornstarch, and lemon juice.
- Cook, stirring gently, until the mixture starts to bubble and thicken, about 5-7 minutes. Remove from heat and let it cool.
- Make the Shortbread Dough:
- Preheat your oven to 350°F (175°C) and line an 8-inch (20 cm) square baking pan with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy.
- Stir in the vanilla extract.
- Gradually add the flour and salt, mixing until just combined. The dough will be soft.
- Assemble the Wedges:
- Press half of the shortbread dough evenly into the bottom of the prepared baking pan to form a base layer.
- Spread the cooled blackberry filling evenly over the shortbread base.
- Crumble the remaining shortbread dough over the blackberry filling, covering it as evenly as possible.
- Bake:
- Bake in the preheated oven for 30-35 minutes, or until the top is lightly golden.
- Remove from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Cut and Serve:
- Once completely cooled, lift the shortbread out of the pan using the parchment paper overhang. Cut into wedges or squares.
- Optionally, dust with additional powdered sugar before serving.
