    • 1 cup (150 g) fresh or frozen blackberries
    • 1/4 cup (50 g) granulated sugar
    • 1 tablespoon cornstarch
    • 1 tablespoon lemon juice

Instructions

  1. Prepare the Blackberry Filling:
    • In a small saucepan over medium heat, combine the blackberries, granulated sugar, cornstarch, and lemon juice.
    • Cook, stirring gently, until the mixture starts to bubble and thicken, about 5-7 minutes. Remove from heat and let it cool.
  2. Make the Shortbread Dough:
    • Preheat your oven to 350°F (175°C) and line an 8-inch (20 cm) square baking pan with parchment paper, leaving some overhang for easy removal.
    • In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy.
    • Stir in the vanilla extract.
    • Gradually add the flour and salt, mixing until just combined. The dough will be soft.
  3. Assemble the Wedges:
    • Press half of the shortbread dough evenly into the bottom of the prepared baking pan to form a base layer.
    • Spread the cooled blackberry filling evenly over the shortbread base.
    • Crumble the remaining shortbread dough over the blackberry filling, covering it as evenly as possible.
  4. Bake:
    • Bake in the preheated oven for 30-35 minutes, or until the top is lightly golden.
    • Remove from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  5. Cut and Serve:
    • Once completely cooled, lift the shortbread out of the pan using the parchment paper overhang. Cut into wedges or squares.
    • Optionally, dust with additional powdered sugar before serving.

For added sweetness and visual appeal, dust the wedges with powdered sugar before serving. A drizzle of lemon glaze or a scoop of vanilla ice cream pairs beautifully for an indulgent touch.
