  • Author: David Andersson
  • Total Time: 65 minutes
  • Yield: 10 slices 1x
  • Diet: Gluten Free

Description

Almond flour zucchini bread is a healthy twist on the classic zucchini bread, replacing traditional all-purpose flour with almond flour, making it low-carb and gluten-free. The addition of zucchini makes it extra moist and adds a nutritious element, while the use of natural sweeteners like monk fruit sweetener or erythritol ensures it’s a diabetic-friendly treat. This bread is perfect for those looking to manage their blood sugar levels, offering a delicious, healthy snack that won’t spike glucose levels.

Ingredients

Scale
  • 2 cups almond flour (finely ground, blanched)

  • 2 tbsp coconut flour (for texture)

  • 1 tsp baking soda

  • ½ tsp baking powder

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg (optional)

  • ¼ tsp salt

  • 3 large eggs

  • ¼ cup olive oil or melted coconut oil

  • ¼ cup unsweetened applesauce (adds moisture)

  • â…“ cup granular monk fruit sweetener or erythritol (adjust to taste)

  • 1 tsp vanilla extract

  • 1 cup grated zucchini (squeezed well to remove excess moisture)

  • ¼ cup chopped walnuts or pecans (optional)

  • 2 tbsp chia seeds or flaxseeds (optional, for fiber boost)

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.

  2. Mix dry ingredients: In a bowl, whisk together almond flour, coconut flour, baking soda, baking powder, cinnamon, nutmeg, and salt.

  3. Mix wet ingredients: In another bowl, whisk eggs, oil, applesauce, sweetener, and vanilla until well combined.

  4. Combine: Add dry ingredients to wet, mixing gently. Fold in zucchini and nuts/seeds if using. Batter should be thick but spreadable.

  5. Bake: Spread batter evenly in loaf pan. Bake 45–55 minutes, until golden and a toothpick comes out clean.

  6. Cool completely before slicing (bread firms as it cools).

Notes

For extra flavor and texture, fold in a handful of chopped walnuts or dark chocolate chips (sugar-free). Enjoy it toasted with a spread of almond butter or a dollop of Greek yogurt for a wholesome snack.
