Ingredients
Dough
3 cups all-purpose flour
¼ cup cocoa powder (unsweetened)
¼ cup granulated sugar
2¼ tsp (1 packet) instant yeast
½ tsp salt
3 large eggs, room temperature
½ cup warm whole milk (110°F / 43°C)
½ cup unsalted butter, very soft
¾ cup chocolate chips or chunks (semi-sweet or dark)
Egg Wash
1 egg
1 tbsp milk
Instructions
Mix dry ingredients
In a large bowl, whisk flour, cocoa powder, sugar, yeast, and salt.Add wet ingredients
Add eggs and warm milk. Mix until a shaggy dough forms.Knead & add butter
Knead for 5–6 minutes (by hand or mixer).
Gradually add butter, kneading until smooth, elastic, and glossy (about 8–10 minutes).First rise
Place dough in a greased bowl, cover, and let rise until doubled (1–1½ hours).Add chocolate chips
Gently knead in chocolate chips.Shape buns
Divide dough into 8 equal pieces. Shape into smooth balls and place on a lined baking sheet.Second rise
Cover and let rise for 30–45 minutes until puffy.Bake
Preheat oven to 350°F (175°C).
Brush buns with egg wash.
Bake for 18–22 minutes, until set and slightly glossy.Cool (if you can)
Let cool slightly before serving—best warm and soft.
